Unlike commercial producers, we preserve the natural goodness of our raw honey by gently heating it to 104°F, maintaining its beneficial enzymes and nutrients.  Many commercial honey producers heat their honey to around 160°F to break down sugar crystals and filter out pollen grains, extending its shelf life by preventing crystallization. However, heating above 115°F compromises beneficial enzymes, antioxidants, vitamins, and aroma, while filtering removes pollen grains.
